The Caesar is arguably one of the most popular and beloved salads of all time, despite being traditionally loaded with saturated fat in the form of cheese, egg yolks and heavy oils. So, how about a colorful “New Age” version that’s equally delicious, but vastly better for you, being fully raw, vegan, and gluten-free? The colorful additions make for a super elegant presentation, suitable for the most special of occasions, including your holiday table! Serves approx. 6. Dressing recipe below.
3-6 organic Romaine hearts, cleaned and dried, leaves torn into bite size pieces
1 handful thinly sliced red cabbage or radicchio
1 firm but ripe avocado, cut into chunks
1 cup sliced grape tomatoes
½ cup thinly sliced carrots
1/2 cup organic frozen corn, thawed (optional)
¼ to ½ cup raw hemp hearts
Enlightened Caesar Dressing:
1 cup raw cashews soaked at least 30 min.
1/2 cup water
1/4 cup organic, cold-pressed extra virgin olive oil
2 tablespoon fresh-squeezed lemon juice
1 tablespoon Dijon mustard
2 small garlic cloves
1 tablespoon vegan Worcestershire sauce, such as Annie’s
4 teaspoons capers
1 teaspoon Pink Himalayan salr
Fresh cracked pepper to taste
For dressing, place all items in a blender and process until smooth. Toss with prepared veggies in a large, pretty glass bowl and top with slivered raw almonds or chopped raw walnuts in place of dairy cheese and/or processed croutons. Enjoy!
